Some things are just better together. Spaghetti and meatballs, chili and cornbread, and green beans and bacon just to name a few. But peanut butter pairs well with so many foods, and it’s tasty by itself!

I wanted to do something special for National Peanut Butter Lover’s Month. It was really hard to choose but I managed to land on chocolate as the perfect complementary ingredient to go with that amazing golden nutty butter.

For Peanut Butter Cups, you will need…PeanutButterCups
2 12 oz. bags dark chocolate chips
1/2 c. creamy peanut butter
1/4 c. powdered sugar
1 tsp. vanilla extract
mini baking cups
coarse salt (optional)

Fun fact, peanuts are not actually nuts. They are legumes, or beans. And they can be paired with sweet foods like honey, jelly and, of course, chocolate.

Start by lining a baking sheet with 48 mini baking cups. Don’t get them too close together or the cups won’t stay round. Then mix together the peanut butter, powdered sugar and vanilla in a small bowl by hand.

Heat one bag of chocolate chips until melted. I prefer to use a double boiler method, so I can stir it the entire time. It’s very easy using the stove top and a pot of boiling water with a larger glass bowl that fits over the top with the chocolate in it. The heat from the water warms the bowl and melts the chocolate slowly. Be careful of the steam so as not to burn yourself, though.

Once all of the chips are melted and the chocolate is shiny, spoon about a teaspoon of chocolate into the bottom of each cup. I like to tap the baking sheet on the counter to smooth them all out once they have been filled.

Roll marble size pieces of the peanut butter mixture by hand. Then flatten them with your fingers. Place one disc on top of each layer of chocolate in the cups.

Finally, melt the second bag of chocolates and repeat the filling step covering each of the peanut butter discs. Then place in the refrigerator for at least one hour before serving.

Don’t like dark chocolate? No problem! Just switch it out for your favorite chocolate chips. Instructions
  1. Line a baking sheet with 48 mini baking cups.

  3. Heat one bag of chocolate chips until melted in a double boiler while stirring.
  4. Spoon about a teaspoon of chocolate into the bottom of each cup.
  5. tap the baking sheet on the counter to smooth the chocolate once the cups are filled.
  6. Roll marble size pieces of the peanut butter mixture by hand.
  7. Flatten them into patties with your fingers.
  8. Place one peanut butter disc on top of each layer of chocolate in the cups.
  9. Melt the second bag of chocolates and repeat the filling step covering each of the peanut butter discs.
  10. Chill for at least one hour before serving.
