Nothing makes a hot day better than a cold slice of watermelon. And it’s a treat enjoyed by all ages here in Texas.

The only drawback is watermelon can be messy to eat. But I have a recipe to enjoy the flavor without all the mess.

For Watermelon Fruit Leather, you will need…Watermelon-Fruit-Leather
1 personal size watermelon, seedless if possible
1/2 c. powdered sugar
1/2 lemon, juiced
parchment paper
cheesecloth

These few ingredients will work together to make some tasty treats. And by changing out the fruit, you can make this recipe with other summer fruits, too. Like strawberry, blueberry and peach. Even cantaloupe!

Start by preheating your oven to 200 degrees. While the oven is heating, remove the rind from the watermelon and cut into chunks.

Puree the watermelon chucks in a food processor. Then pour the puree into cheesecloth over a large bowl to separate the solids from the juice. Hold onto the juice for drinking or adding to drinks later. You may need to repeat this process a few times to get all of the melon pureed and strained.

Mix the sugar and the lemon juice into the watermelon solids. Spread the watermelon in a thin layer onto a baking sheet lined with parchment paper. It must be lined, so you can remove it once baked.

Bake for 5 hours, turning each hour, until all of the juice is out of the fruit, and it’s tacky to the touch.

Once cool enough to touch, trim the edges to make everything even. Then cut the fruit leather into strips that you can roll or store flat. It makes quite a few strips, so be sure to store them in an airtight dry container. They will last about two weeks, unless you eat them all before then.
